We used about seven ounces of the chicken tonight to make a big bowl of chicken salad. My chicken salad used to be pretty boring but a google search early last summer turned up this recipe for chicken salad which I made for a ladies lunch I hosted at my house. It was a huge hit and I ended up passing the recipe link to several people.
When we started Volumetrics, I was thrilled that one of our favorite meals already fit the Volumetric principles without any modification other than using a smaller amount of chicken than the recipe calls for. I use the equivalent of one boneless, skinless breast which keeps the calories low. And instead of eating the salad between slices of bread, we serve it on a bed of greens with a side of little whole-wheat crackers made from whole wheat flour, water, salt, honey, and olive oil and cut with a star-shaped cookie cutter.
The last two ounces of chicken along with the chicken stock I made will make Chicken & Wild Rice Soup tomorrow night for dinner.
